Some books take months to write.
After completing my latest book, WE ARE SALT, I came to an important realisation.
The story of salt is only the beginning.
WE ARE SALT explains one of the most remarkable facts about human life.
Before we take our first breath, we spend approximately nine months developing in our mother's womb, surrounded by amniotic fluid containing water and electrolytes, including salts and minerals.
In a very real sense, we begin life surrounded by a warm, mineral-containing fluid.
And after birth, our dependence on water, salt and minerals never leaves us.
The trillions of cells throughout our body depend upon the fluid environment around them for the exchange of oxygen, nutrients, chemical messages and waste products.
I like to call this our:
INTERNAL OCEAN
This internal environment depends upon water and electrolytes—including sodium, potassium, chloride, magnesium and calcium—to support normal hydration, nerve signalling, muscle function and countless other processes necessary for life.
Put very simply:
Water + Salt + Minerals = Electrolytes
And electrolytes are rather like our body's electrical system—or battery.
For more than forty years, I have been fascinated by the role that natural minerals and whole foods play in helping the body function as it was designed to.
That journey led me to natural sea salt.
It led me to the remarkable salt marshes of Guérande.
It led me to study the work of people such as René Quinton, Alexis Carrel, Derek Denton and Jacques de Langre.
And now that journey has led me back to the ocean.
Because the ocean gives us much more than salt.
It also gives us an extraordinary family of whole foods that mankind has eaten for thousands of years:
SEA VEGETABLES
Wakame.
Kelp.
Nori.
Ulva.
Guso.
Lato.
And many others.
These foods can naturally provide minerals and other nutrients, although their nutritional composition varies considerably from one species and source to another.
That is why I now see WE ARE SALT not as the end of a journey, but as the beginning of the next chapter.
We need to rediscover the simplicity of real food, water, salt and minerals, while remembering that good health depends on the whole picture—not any single ingredient.
Our philosophy remains very simple:
